  • 2 tablespoons ghee or butter
  • Salt to taste

For the Dum Cooking:

  • 1 large onion, thinly sliced and fried until golden brown (for layering)
  • A pinch of saffron (soaked in 2 tablespoons warm milk)
  • 2 tablespoons ghee or clarified butter
  • 1 tablespoon fried onions (for garnish)

Instructions:

1. Marinate the Meat:

  • In a large bowl, add the meat (mutton or chicken), yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala powder, coriander powder, cumin powder, lemon juice, and salt.
  • Mix everything well and let it marinate for at least 2-3 hours (or overnight for deeper flavor).

2. Prepare the Rice:

  • Wash the basmati rice thoroughly under cold water to remove excess starch.
  • Boil water in a large pot and add cloves, cardamom, cinnamon stick, bay leaf, cumin seeds, and a pinch of salt.

  • Then, layer the partially cooked rice over the meat.

  • Repeat the layers until all the meat and rice are used up.

5. Dum Cooking:

  • Seal the pot tightly with a lid. You can also seal the edges with dough to trap the steam.
