Ingredients:

For Marination:

  • 500 grams of Basmati rice
  • 300 grams of boneless chicken or mutton (or vegetables for a vegetarian version)
  • 1 cup of thick yogurt
  • 2 tablespoons of ginger-garlic paste
  • 1 teaspoon of red chili powder
  • 1/2 teaspoon of turmeric powder
  • 1 teaspoon of garam masala
  • Salt to taste
  • 2 tablespoons of vegetable oil

For Biryani:

  • 3 tablespoons of ghee (clarified butter)
  • 2 large onions, thinly sliced
  • 2 tomatoes, chopped
  • 2-3 green chilies, slit
  • 1/2 cup of fresh coriander leaves, chopped
  • 1/2 cup of fresh mint leaves, chopped
  • 1/2 teaspoon of saffron strands soaked in 2 tablespoons of warm milk
  • 2 tablespoons of lemon juice
  • Salt to taste

Whole Spices:

  • 1 bay leaf
  • 4-5 cloves
  • 4-5 green cardamom pods
  • 2-3 black cardamom pods
  • 1-inch cinnamon stick
  • 1 star anise

Instructions:

  1. Marinate the Meat or Vegetables:
  • In a large bowl, combine the meat (or vegetables) with yogurt, ginger-garlic paste, red chili powder, turmeric powder, garam masala, salt, and vegetable oil. Ensure the mixture is well combined and marinate for at least 1 hour.
  • Parboil the Rice:
  • Rinse and soak the Basmati rice in water for 30 minutes.
    • In a large pot, bring water to a boil and add the rice with a pinch of salt. Parboil the rice until it’s 70% cooked. Drain and set it aside.
  • Prepare the Saffron Milk:
  • Soak saffron strands in warm milk and set aside. This will be used for garnishing.
  • Layering the Biryani:
  • Heat ghee in a heavy-bottomed pan or biryani pot. Add the whole spices (bay leaf, cloves, green cardamom, black cardamom, cinnamon stick, star anise) and sauté until they become aromatic.
    • Add the sliced onions and fry until they turn golden brown.
    • Add the marinated meat (or vegetables) and cook until it’s partially done.
    • Layer the partially cooked rice over the meat in the pot.
    • Sprinkle chopped tomatoes, green chilies, fresh coriander leaves, and fresh mint leaves over the rice.
    • Drizzle lemon juice and the saffron milk over the top.
  • Dum Cooking:
  • Seal the pot tightly with a lid, using wheat dough or aluminum foil to ensure no steam escapes.
    • Cook on low heat (dum) for 20-25 minutes until the meat or vegetables are fully cooked, and the rice is tender.
  • Serve Your Tadipatri Dum Biryani:
  • Carefully open the lid and gently mix the layers.
    • Serve hot with raita (yogurt dip) or a side salad.
